Mozzarella in carriage

Buffalo mozzarella, bread and eggs, three simple ingredients that give life to the much loved mozzarella in carriage, the Neapolitan appetizer that everyone agrees.

Ingredients (6 portions),

500 g buffalo mozzarella

12 slices of bread

3 eggs

Bread crumbs

peanut oil, salt

Directions,

1. Step 1

For the mozzarella in carriage recipe, cut the mozzarella into slices about 1 cm thick and press them a little between sheets of kitchen paper. Then leave them to «make water» for about 1 hour.

Step 2

Remove the crust from the slices of bread and prepare 6 Sandwiches with mozzarella, trying to cover the entire surface of the bread, trimming any excess.

Step 3

Dip the sandwiches in the beaten eggs and then in the breadcrumbs twice, taking care to seal the edges well.

Step 4

Fry the sandwiches in plenty of peanut oil at about 160-170°C for about 5 minutes, turning them on both sides. Drain them on kitchen paper and serve immediately, with a pinch of salt.
