New York club sandwich

Ingredients

200 g

Chicken breast fillet(s)

½ tsp chilli powder

1 tsp sunflower oil

8 slice/s Breakfast bacon

1 Avocado(s)

½ head salad

12 slice/s Wholemeal toast

4 tbs tomato ketchup

2 tbsp mayonnaise

½   Lime(s), the juice from it

salt and pepper

Preparation,

Working time about 35 minutes

Cooking/baking time approx. 20 minutes

Total time about 55 minutes

Preheat the oven to 180 C.

Season the chicken breast fillet with salt, pepper and chili powder. Heat the sunflower oil in an ovenproof pan. Sear the chicken meat vigorously on both sides. Place in the oven and roast for about 15 minutes.

Fry the bacon in a pan without adding any fat until crispy, drain on kitchen paper.

Peel, halve, stone and thinly slice the avocado. Drizzle the slices with lime juice and season with salt and pepper. Wash lettuce leaves and pat dry.

Toast the toast slices, spread 4 slices with Tomato ketchup. Thinly slice the chicken breast, place on the toast and place the bacon on top. Top with another 4 slices of toast and cover them with mayonnaise, lettuce and the avocado slices. Place the remaining slices of toast on top and secure with toothpicks. Cut the sandwiches into triangles.
