Quindim recipe without eggs

Quindim (Eggless)

Ingredients

Pudding

• 1/2 cup whole milk (tea)

• 1/2 cup (tea) of sugar

• 1 and 1/2 tablespoon Coconut milk

• 1 tablespoon oil

• 1 and 1/2 tablespoon cornstarch

• 1 and 1/2 cup (tea) of raw yellow cassava, grated

• 50 g grated coconut

• 1 pinch of saffron

• Crystal sugar for sprinkling

Syrup

• 4 tablespoons Crystal sugar

Method of preparation

Pudding

• In a blender, blend all ingredients until smooth.

• If necessary, add another 1 or 2 tablespoons of water.

• Grease four medium Cupcake/MUFFIN molds (10 cm in diameter) with oil and sprinkle with a small amount of granulated sugar.

• Pour the dough and bake in a bain marie, in a medium oven (180°C), preheated, for about 1 hour or until, when sticking a toothpick, it comes out clean.

Syrup

• Mix the sugar with 4 tablespoons of water and cook for about 15 minutes, until it thickens.

• Reserve.

• Unmold the quindim and brush it with the syrup.
