Ingredients for 6-8 people,

160 g white spreadable cheese

80 g granulated sugar

50 g milk

30 g flour

20 g butter

10 g corn starch

4 eggs

Method

1. Step 1

Process the cheese at room temperature in a bowl until it becomes very creamy.

Step 2

Add the butter, already slightly softened, and incorporate it by melting it over a Hot bain-marie, but away from the heat. Mix until you get a cream similar to a bechamel. Then add the milk and mix again with a whisk, spatula the edges well, so that everything is blended evenly.

Step 3

Add the sifted flour and starch to the mixture and mix with a whisk until a smooth cream is obtained again.

Step 4

Flavor it with a pinch of grated lemon zest.

Step 5

Add the egg yolks to the mixture and mix.

Step 6

Whip the egg whites with 1 teaspoon of lemon juice, on low speed, to form very small and dense bubbles, for about 2 minutes. Add 1 ⁄3 of the sugar and beat for 1 minute, then another third of the sugar and beat again for 1 minute; finally pour the remaining sugar, increase the speed of the whips and whip again for 4 minutes. Add a pinch of cream of tartar and whip for 1 more minute: you will have to obtain a consistent but soft, not chalky mixture.

Step 7

Incorporate the whipped egg white into the mixture, little by little, mixing it gently with a soft whisk.

Step 8

Pour the Dough into a conical aluminum panettone mold, with the bottom lined with baking paper. Let it fall over the spatula, to «break the jet» avoiding that air is incorporated.

Step 9

Place the mold in a pan, pour already boiling water up to half the height of the mold. Bake in a bain-marie at 160°C for 30 minutes. Open the oven for 5 seconds, close it and cook at 120°C for another 1 hour.

Step 10

Leave to cool and enjoy with the whole family.
