Baked pastry

Ingredients

2 cups (tea) of rice flour (300g)

1 cup (tea) of potato starch (200g)

½ cup corn starch (50g)

4 eggs

1 tablespoon of  olive oil (13ml)

2 tablespoons vegetable oil (26ml)

½ cup (tea) of water (140ml)

1 ½ teaspoon salt (7.5g)

1 teaspoon (tea) of chemical yeast (4g)

1 egg yolk for brushing

Method of preparation

In a container, place the rice flour, the Potato starch, the corn starch, the yeast and the salt.

Make a cavity in the middle of these ingredients and add the vegetable oil, olive oil, eggs (pass the eggs through a sieve to avoid yellow spots in the dough), and mix.

Add the water and stir until it doesn't stick to your hands and/or the bowl.

Let the dough rest in the fridge for 30 minutes before rolling it out.

Preheat oven to 180°C for 10 minutes.

On a smooth and clean surface sprinkle Uncle rice flour and open the dough with your hands.

Dust the dough with flour and roll it out using a floured rolling pin.

When the dough is thin, cut it into the desired shape and add the filling of your choice.

Close the pastries.

Place them in a non-stick pan and brush the surface with egg yolk.

Bake for 15 minutes at 180°C.

Yield: 8 medium servings or 16 small servings.
