Berry muffins
Ingredients for 14 piece portions,200 g berries
200 g 00 flour
100 g sugar
80 g natural yoghurt
80 g milk
60 g butter
1 packet of yeast for desserts
1 egg
lemon, vanilla pod
salt
Method,
1. Step 1
For the recipe of the muffins with berries, mix the flour with the sugar, the baking powder, the seeds of 1/2 vanilla pod, the grated rind of 1 lemon and a pinch of salt.
Step 2
Add the milk and yoghurt and begin to blend with an electric mixer, then mix in the butter, soft like an ointment, and the egg. Knead until the compound becomes smooth, without working it too much, to prevent the muffins from being sticky.
Step 3
Add 150 g of berries and incorporate them with a spatula.
Step 4
Distribute the batter into multiple muffin molds; sprinkle with the remaining berries and bake at 175°C for about 20 minutes.
